At Flying Biscuit on Mulberry Street, we fold cold butter into dough by hand, let each batch rise slowly, and pull golden, flaky biscuits from the oven before the city wakes up.
24 layers of butter and dough, laminated by hand before every bake.
48-hour fermented, crusty-crusted, soft-crumbed.
Flying Biscuit started with a simple conviction: the best bread comes from patience, quality ingredients, and hands that care. We opened our doors on Mulberry Street with a small deck, a stand mixer, and a recipe notebook full of tried-and-true methods passed down through generations.
Today, we're still baking the same way — no shortcuts, no preservatives, no industrial timers. Our buttermilk biscuits are rolled and folded by hand every morning. Our sourdough starts from a starter we've nurtured for years. Every item on our shelves earned its place.
Every item is produced in small batches, using time-honored techniques and the finest local ingredients Macon has to offer.
Signature
Our award-winning recipe — flaky, buttery, and made with real buttermilk. Available plain or with herbs and aged cheddar.
Daily Special
48-hour cold ferment, steam-injected oven, and a crust that sings when you tap it. Three loaves come out of each batch.
Seasonal
Seasonal fruit fillings wrapped in flaky, brown-butter crust. Think peach & brown sugar in summer, apple & cardamom in fall.
Seven layers of French butter and laminated dough, folded over three days. Golden, shattering, impossibly light.
Rotating flavors made with seasonal produce. Blueberry lemon, maple bacon, and dark chocolate oat are customer favorites.
House Favorite
Locally roasted beans, brewed fresh throughout the day. Pour-over, drip, or espresso — paired perfectly with any pastry.
Every step is deliberate. Every detail matters. Here's what happens before you take that first bite.
We partner with Georgia farms for butter, eggs, and seasonal fruit. Our flour comes from regional mills.
Dough is mixed by hand, then rested — sometimes overnight — to develop flavor and texture naturally.
Each biscuit is laminated, each loaf is scored. No machines do the work that hands can do better.
Ovens fire at 5AM. By 7AM, your biscuits are warm, your bread is crusty, and your coffee is pouring.
I've been coming to Flying Biscuit every Saturday for over a year now. The buttermilk biscuits are unreal — I drive past three other bakeries just to stop here. Nothing else in Macon comes close.
The sourdough loaf is worth the wait. Crusty exterior, tangy aroma, and that open crumb — you can tell this is made by someone who actually loves bread. My family goes through two loaves a week.
Stopped in on a weekday morning and was greeted by name within a week. The pastries are incredible — the peach hand pie in summer changed how I think about fruit desserts. This place is a gem.
Our batches are small and our shelves don't stay full for long. Come early, grab your favorites, and taste the difference that patience and quality ingredients make.
